A busy-looking kitchen with low productivity usually means overstaffing relative to demand, an inefficient menu or station layout, or a prep workload that isn't matched to service volume. This number is most useful tracked over time in your own business — a declining trend usually has a specific, findable cause worth investigating before it's addressed with more hours rather than better systems. All rostered hours for kitchen staff across the day — chefs, cooks and kitchen hands — including prep time before service, not just hours during active service. Leaving out prep time will overstate productivity relative to what the roster actually costs.
It varies significantly by service style and menu complexity — a quick-service kitchen with a simple, high-volume menu might run 6–10+ covers per labour hour, while a premium restaurant with an elaborate menu might run 1.5–3. The more useful comparison is against your own venue's history and against comparable venues with a similar menu complexity, not a single industry-wide number.
Because productivity alone doesn't capture cost — a kitchen could serve more covers per hour by using cheaper, less experienced labour, which shows up as higher productivity but might carry other costs (quality, consistency, training). Wage cost per cover combines both efficiency and cost into one number.
